Conferences, training, and more!
The last few weeks have flown by for us!
It started two weeks ago on Feb 24 with the Farmer, Fisher, Chef Connection hosted by Seattle Chefs Collaborative. Here we had the opportunity to meet some of the region's top chefs and hear the latest news of what's going on in the sustainable food movement. There were numerous breakout sessions covering everything from financing new food startups to the issues surrounding salmon in the Columbia and Snake Rivers. Lots of great information combined with delicious food provided by numerous local producers and prepared by the Seattle Culinary Academy made this event all around amazing.
Just a few short days later we attended the Wild Seafood Exchange put on by Fisherman's News. Now here's a great event to get involved in if you love fresh seafood and want to find those that sell it! Straight away we dove into a panel discussion that was chaired by several local business owners and highlighted their experiences as restaurateurs and resellers. The atmosphere was casual and inviting, which led to several very informative discussions. Later in the day we covered topics relating to maximizing fish quality and policy matters concerning the fisheries on the Columbia River. Another great day of learning and meeting many friendly individuals in the industry!
The following week brought an additional 3 days of training as well as the completion of the design for our large 50 pound fish boxes!
There's only a month and a half until the Washington season opens and while still a bunch to do, we're taking it in strides and making time to have fun along the way. Until next time!
